Potato with Veggie Chili, Broccoli and Cheddar
Ingredients
- 1 medium potato
- 1 cup frozen broccoli florets
- 1 cup canned vegetarian chili or turkey chili with beans
- 1/4 cup shredded low-fat cheddar cheese
Directions
Wash potato, prick it 2 or 3 times with a knife, and microwave for 10 minutes, turning once. Heat broccoli and chili in a microwave or on stovetop. Top cooked potato with warm chili and broccoli. Sprinkle with cheese.





I think this is a good recipe. Microwave & potatos work well together. I would also make my own chili due to the sodium content and maybe add a tablespoon of fat free ranch to this. With those changes, I would give this a 4 stars.
10/17/2011 06:42:14 AM Report Abusehonestly, i would bake the potato in the oven and make my own vegetarian chili. hard to find canned here and when you do find it the sodium content is outrageous! make it in bulk and freeze it in individual containers!
