Garlic Parmesan Chicken with Roasted Vegetables
Ingredients
- 2 garlic cloves, minced
- 2 tablespoons grated Parmesan cheese
- 3 teaspoons olive oil, divided
- 1 3 ounce chicken breast
- 3 cups chopped vegetables (broccoli, potato, bell pepper)
- Salt and pepper to taste
Directions
Preheat oven to 400 F. Mix together garlic, cheese and 1 tsp. oil. Pat garlic-cheese mixture onto chicken and place on baking sheet. Toss vegetables with 2 tsp. oil, salt and pepper and place on baking sheet. Cook for 20 minutes, or until chicken reaches 165 F and vegetables are tender.




to carlypod, I would guess that this recipe is for one serving. I figured out the calories of all the individual ingredients,(with rough numbers) and it seems to add up to the total in the nutritional info.
