Cajun Chicken With Dirty Rice
Ingredients
- 1 teaspoon dried Cajun seasoning
- 4 ounces chicken breast
- 2 teaspoons olive oil
- 2 garlic cloves, minced
- 1 cup chopped onion
- 1 green bell pepper, diced
- 2 tablespoons tomato paste
- 3/4 cup precooked brown rice
- few dashes Tabasco sauce, to taste
Directions
1. Sprinkle Cajun seasoning on chicken and bake or grill.
2. Add oil to skillet; saute garlic, onion, bell pepper, tomato paste and Tabasco for 2 to 3 minutes.
3. Add pre-cooked rice and saute for 5 more minutes. Serve chicken on rice.





I love this recipe and make it regularly. If I want to splurge a little, I coat the chicken in crushed up crackers mixed it with the Cajun seasoning, cook about 1-2 minutes on each side in a hot pan with olive oil, then finish in the oven. Really good! My boyfriend went to college in Louisiana and this Cajun dish is up to his standards too.
3/10/2011 10:02:12 AM Report AbuseThis recipe is really yummy, although the chicken was a bit dry. I just added teriyaki sauce to it. Instead of adding tabasco to the rice, I added egg and teriyaki sauce. I used sesame oil. Really really yummy!
5/19/2010 07:54:03 PM Report AbuseI really enjoyed this recipe. I over cooked the chicken a little but the cajun seasoning gave it really nice flavor. My boyfriend thought that the onions & peppers overpowered the rice too much...I didn't think that they did. I really like how this recipe is 1 serving & it's really large. I actually had to ate this as 2 servings because 1 was too much for me. It was even better as left overs.
