I love this recipe and make it regularly. If I want to splurge a little, I coat the chicken in crushed up crackers mixed it with the Cajun seasoning, cook about 1-2 minutes on each side in a hot pan with olive oil, then finish in the oven. Really good! My boyfriend went to college in Louisiana and this Cajun dish is up to his standards too.

This recipe is really yummy, although the chicken was a bit dry. I just added teriyaki sauce to it. Instead of adding tabasco to the rice, I added egg and teriyaki sauce. I used sesame oil. Really really yummy!

I really enjoyed this recipe. I over cooked the chicken a little but the cajun seasoning gave it really nice flavor. My boyfriend thought that the onions & peppers overpowered the rice too much...I didn't think that they did. I really like how this recipe is 1 serving & it's really large. I actually had to ate this as 2 servings because 1 was too much for me. It was even better as left overs.
