Black Bean Chili
Makes 1 serving
3 ounces extra-lean ground beef
1/2 cup rinsed and drained canned black beans
2 diced bell peppers (red or yellow)
2 diced tomatoes
1/2 cup shredded 2 percent cheddar cheese
1. Brown the beef in a skillet.
2. Add the beans, peppers, and tomatoes and simmer on low heat for 10 minutes.
3. Sprinkle cheese on top. Serve immediately.

3/15/2010 11:33:34 AM Report AbuseI make a black bean chili like this one, but use corn for color and crunch instead of cheese, so it cuts down the fat. I would also recommend adding some spices to further satisfy your taste buds - I like chili powder, cumin and some brown sugar.
