Which is a healthier choice - whole wheat pasta, couscous or brown rice?

Whole wheat pasta has the most fiber per serving and that's one of the main benefits you're looking for when figuring out the best whole grain. Variety is the key, though, and so is portion control -- it's very easy to overeat pasta. Even whole wheat pasta, while healthier than "regular" is still a small portion for a serving size.
